迎春纳福:三丝春卷
春卷是将面团摊成薄皮,内包馅料,能荤能素,咸甜俱可,卷成筒状,用旺火炸至金黄。是春节前后的应市传统名菜,喻有迎春之意,它色泽美观、酥脆上口,味道鲜美,是春节宴席上不可少的时令佳肴。

    Steps to make 迎春纳福:三丝春卷

    • 1.材料:绿豆芽、韭菜、粉条、鸡蛋、饺子皮、水淀粉调味:盐。
    • 2.将绿豆芽掐头去尾洗净;粉条温水浸泡至软捞出切碎;韭菜摘洗干净切碎;鸡蛋打散摊成蛋皮切碎。
    • 3.将所有菜碎入锅中加少许盐略炒,盛出待冷却备用。
    • 4.将饺子皮擀成薄片,放上炒好的馅料。
    • 5.先卷起一边,再将两边向中间折起,卷向另一边形成长扁圆形的小包,用水淀粉收口。
    • 6.包成春卷,排入盘子。
    • 7.锅置火上油烧至7成热,转中火将包好的春卷逐一放入。
    • 8.炸至表面呈金黄色捞出,沥油装盘。
