手工洗面筋凉皮

    Steps to make 手工洗面筋凉皮

    • 1.面粉中加入盐水和成硬一点的面团,醒至三十分钟。
    • 2.面团中水,如洗衣服一样,来回揉搓。
    • 3.洗出的面糊沉淀五个小时以上,冬季可隔夜沉淀。
    • 4.洗出面筋的水清澈,面筋就OK了。
    • 5.面筋入开水锅笼屉上蒸熟,大概二十五分钟左右。
    • 6.倒掉面糊沉淀的一部分清水,面浆浓稠即可。
    • 7.不锈钢盘抹油,盛入面浆,入开水锅蒸三四分钟,气泡取出。
    • 8.隔水晾凉。
    • 9.抹油取出凉皮。
    • 10.改刀成条状,粗细均可。
    • 11.面筋熟后取出晾凉改刀。
    • 12.面皮依次切好备用。
    • 13.黄瓜切丝,蒜泥和花生碎备用。
    • 14.凉皮的灵魂,油泼辣子不能少,醋,酱油备用。
    • 15.取适量凉皮,加面筋,黄瓜丝,蒜泥,盐,醋,酱油,油泼辣子。
    • 16.搅拌均匀撒入花生碎即可享用。
