  • 五花肉末500克
  • 黄豆酱70克
  • 干黄酱70克
  • 甜面酱40克
  • 蚝油20克
  • 10克
  • 花椒粉2克
  • 十三香3克
  • 白胡椒粉3克
  • 200克

Steps to make 炸酱面

  • 1.把所有酱汁原料混合,搅拌均匀。
  • 2.锅中加入多一点的凉油,下入八角、花椒、小茴香、香叶小火慢炸,炸出香味后捞出。
  • 3.再下入葱姜蒜末炒出香味。
  • 4.下五肥五瘦的五花肉末炒至变色。
  • 5.加入老抽上色,再加入调好的酱汁用中小火熬出酱香味。
  • 6.加入约半斤的水烧开,继续熬至浓稠。
  • 7.最后淋入少许水淀粉关火,再撒入葱末、蒜末搅匀,炸酱就做好了
  • 8.做好的酱炸。
  • 9.黄瓜、红萝卜分别擦成丝、绿豆芽焯水。
  • 10.锅中下入面条煮熟,过一下凉水,再往热汤里蘸一下,这样面条不容易粘连。
  • 11.面条盛入盘中,放上黄瓜丝、胡萝卜丝、绿豆芽,再浇上炸酱即可。
