紫薯冰皮月饼
冰皮月饼不同于传统月饼,它无需烤制,饼皮柔软洁白略有透明感,且无论是脂肪、热量还是胆固醇含量,均低于传统月饼,属环保健康类产品。自己做的紫薯冰皮月饼,软糯香甜,且更加健康美味。今天,用紫薯和糯米分别做了二款不同的冰皮月饼,风味各异。

  • 糯米粉150克
  • 澄粉500克
  • 牛奶120克
  • 植物油30克
  • 白糖50克

Steps to make 紫薯冰皮月饼

  • 1.准备好所有食材。
  • 2.将糯米粉、澄粉放入碗里,搅拌均匀,倒入植物油、白糖混合,再慢慢倒入牛奶,边倒边用筷子搅拌成颗粒状。
  • 3.用手揉成厚面皮,静置30分钟后入蒸锅,中火蒸20分钟至熟(用筷子戳中间没有面桨带出即可),晾凉,揉圆成冰皮面团。
  • 4.将紫薯洗净,放入压力锅煮熟,去皮,放入保鲜袋,用擀面杖压成细腻的薯泥。
  • 5.放入炒锅,倒入适量植物油,稍翻炒。
  • 6.加入白糖、奶粉,混合均匀。
  • 7.将糯米粉放入平底锅,小火炒熟,中间用铲子不停翻动,炒至变黄即可。
  • 8.趁热把炒熟的糯米粉加入紫薯泥中,混合成紫薯面团。
  • 9.将适量紫薯、熟糯米粉、芝麻椰蓉、糖混合成馅料。
  • 10.将馅料分成2份,一份用于冰皮面团,一份用于紫薯面团。先将冰皮面团、馅料分别揉成等份的圆球备用。
  • 11.将冰皮按扁包入馅料,用虎口逐渐向上推,收口,包裹成圆形。
  • 12.放到熟糯米粉里滚一圈,再抖掉多余的粉。
  • 13.将包好、滚圆的饼坯放进模具里。
  • 14.将模具倒扣在案板上,稍稍用力向下按压,提起月饼模具,脱模,装盘即可食用。
  • 15.紫薯面团的做法与冰皮面团的做法一样。
