Technique
Steps to make Mapo tofu
- 1. Ingredients: tofu chunks, minced meat, chopped scallions, garlic, and ginger.
- 2. After boiling the water in the pot, add tofu blanched water and drain.
- 3. Put light soy sauce, cooking wine, white sugar, dark soy sauce, Sichuan pepper powder, and chili powder into a bowl, and then mix well with half a bowl of water.
- 4. Heat the oil in the pot and stir fry the minced meat until fragrant.
- 5. Add scallions, ginger, and garlic and stir fry for a few times.
- 6. Add a spoonful of Douban Sauce and stir fry until red oil is added.
- 7. Pour the prepared sauce into the pot.
- 8. After boiling the water, add the tofu and simmer over low heat for three minutes.
- 9. Pour the water and starch into the water in three batches to remove any impurities.
- 10. Wait for the soup to thicken.
