奶味手撕面包
简单易做,奶香味十足

  • 高筋面粉200g
  • 120g
  • 黄油15g
  • 炼奶15g
  • 细砂糖20g
  • 酵母3g
  • 鸡蛋半个
  • 2g
  • 炼奶20g刷表面用
  • 无盐黄油15g刷表面用
  • 酥粒适量表面装饰

Steps to make 奶味手撕面包

  • 1.全部材料
  • 2.高粉.酵母.练奶.细砂糖.鸡蛋.盐.水混合,醒10分钟再揉成光滑面团(水不要全加完,留少量的,面粉吸水不一样)
  • 3.加入黄油再揉出膜
  • 4.盖上保鲜袋发酵40分钟,转冷藏发酵一晚.(太晚了,要睡觉不等了)
  • 5.发酵好了,冷藏发酵不会大2倍的,(注:在冰箱放了约7小时)
  • 6.用擀面棍擀成长方型 (中间没有松驰面团,我是直接擀成面片)
  • 7.黄油融化,跟练奶温混合.(图左边是鸡蛋液,不小心拍上了)
  • 8.切成四份,每份表面刷上黄油练奶液,叠起来
  • 9.切成小份,摆入模具,入进烤箱发酵40分钟.(模具底部要刷油,每小份面片都要刷黄油练奶液)
  • 10.发酵好后,拿出,表面刷上黄油练奶液,再刷层鸡蛋液,洒上酥粒.放入烤箱中层160度,15分钟
  • 11.成品
  • 12.小不点喜欢吃红豆馅的,我做了2个杯子的.
