Steps to make 猫爪曲奇饼干

  • 1.将面粉、糖倒入盆中,混合均匀。
  • 2.将黄油切小块倒入盆中。
  • 3.带上手套,用手捏、搓、捻、揉,使面粉和黄油充分融合在一起。
  • 4.黄油和面粉形成细小颗粒状。
  • 5.鸡蛋打散搅匀,称量好所需倒入盆中。
  • 6.揉成面团。
  • 7.分成110克、75克、50克的三个面团。
  • 8.75克面团放入可可粉、50克面团放入红曲粉。
  • 9.各自揉成均匀面团。
  • 10.再将面团分成小剂子,原味面团一分为二,取其中一面团均分成3份;红曲粉面团一分为三即可。
  • 11.将大的那份原味面团擀成薄片,再将可可粉面团滚圆成薄片长度,放置其上。
  • 12.包裹好、滚圆后放入冰箱冷冻。
  • 13.再将一分为三的2个面团,原味擀成薄片,红曲粉滚圆,长度相同,并分别对应放置。
  • 14.分别滚圆放入冰箱;冷冻大约30分钟。
  • 15.160度预热烤箱,再取出面团,将可可粉面团切成面片。
  • 16.将红曲粉面团也切成同样厚度的面片。
  • 17.一个大面片三个小面片搭配,贴紧整形摆放入烤盘。
  • 18.依次组合好,放入烤箱烤12分钟左右,边缘上色即可。
