海参蛋炒饭
家里偶尔会剩下米饭,可以盛出盖上保鲜膜冷藏,在第二天炒一份饱满鲜香的蛋炒饭。海参是之前泡发好的,也可以用火腿、鲮鱼或者肉丁替代,各有特色。

  • 鸡蛋2个
  • 黄瓜1段
  • 胡萝卜1只
  • 小香葱2颗

  • 白胡椒粉2g

Steps to make 海参蛋炒饭

  • 1.按照上述食材准备。
  • 2.将黄瓜、胡萝卜、海参切丁。鸡蛋将蛋黄和蛋清分开备用。
  • 3.将蛋黄放入米饭当中(米饭一定要用剩饭,是因为水分蒸发的差不多了,可以保证前期不粘锅)。
  • 4.搅拌均匀(如果太干可以加入少许清水)。
  • 5.将蛋白中火翻炒,取出备用(蛋清放入之前可加入少许盐)。
  • 6.海参因为是生的,需要大火快速翻炒片刻,略微变色后取出备用。
  • 7.锅中加入少许橄榄油,将米饭倒入(这个时候因为有一定水分,需要勤翻炒将水分逐渐去除)。
  • 8.米饭继续不断翻动,直至可以看到部分米粒在锅中会起跳,粒粒分明(此一步很关键)。
  • 9.将黄瓜丁、海参丁、胡萝卜丁放入锅中。
  • 10.加入适量盐(根据米饭的量进行整体把握)和少许白胡椒粉。
  • 11.继续中火翻炒,至米粒和其他配料清晰分明(加入配料后,这个时候由于还存在一些水分,要炒至粒粒分明的程度即可,糯软程度可根据个人喜好把握)。
  • 12.关火,出锅前将些许小香葱花放入,翻转后出锅装盘。大功告成。
