青胡椒奶油虾球
青胡椒是一种较为冷门的食材,盛产于南美,它的食味与黑胡椒、白胡椒有较大的区别,青胡椒有一种本身独有的胡椒香味,用来做汁与煎烤过海鲜和其他肉类搭配时风味特别。

这道奶油虾球份量不大,原味煎熟的虾球和土豆片配上胡椒奶油汁,明丽的颜色+清新的口感,作为圣诞大餐的开胃前菜非常合适。

Steps to make 青胡椒奶油虾球

  • 1.准备材料。大虾除壳剩下尾巴,洗干净吸干水分备用。
  • 2.土豆切片,不要削皮
  • 3.平底锅热油,把土豆片铺上去,中火煎制。油可以多一些,让土豆有点炸过的效果
  • 4.煎到两边煎到金黄色,边沿硬,撒盐
  • 5.土豆片用吸油纸垫着,备用
  • 6.现在做汁:奶油,罗勒叶还有压裂的胡椒粒放在小煮锅里,小火煮
  • 7.最后把最容易熟的虾仁煎熟,大火煎差不多1分钟就好了,如果锅里太干可以加点料酒。我买的是冰冻的老虎虾,个头大,肉质爽脆
  • 8.煎好土豆片垫底层,虾放上面,淋上适量胡椒奶油汁即可
