虽然春天应该以清淡为主,但是我这个爱辣椒如命的人还是按捺不住

特别是酸辣型的更加,前几天去了一家餐厅,不大,很小小的那种

但是菜的味道却相当的好。如果不是朋友带我去肯定不知道

这么小小的一家店味道却这么正,辣的我好爽,其中一道就是鸡胗

回来试着烧一下,却也别有一番滋味

鸡胗在红红绿绿间掩映着雪白的银花,便成为这道火辣香脆的精彩....

Details of ingredients

  • 鸡胗300g
  • 银耳10g
  • 花生50g
  • 榨菜100g
  • 水淀粉15ml
  • 料酒15ml
  • 生抽15ml
  • 15ml
  • 蒜蓉30g
  • 大葱花5g
  • 5g
  • 香葱碎50g
  • 朝天椒碎50g
  • 白芝麻10g

Steps to make 脆辣鸡胗

  • 1.准备好材料,鸡胗清洗干净,洗去血水 ..........
  • 2.洗净后切成均匀的薄片,调入水淀粉,耗油 ,和料酒腌十分钟左右
  • 3.炸花生的时候一定要冷油下锅,小火炸,以免糊锅
  • 4.炸好的花生冷却下,去皮,切粗碎
  • 5.朝天椒和野山椒切碎,大葱切碎,大蒜切蓉,榨菜切粗碎
  • 6.银耳用热水浸泡二十分钟左右泡发,去根部,择小朵
  • 7.锅中留底油,7成热时将朝天椒碎,蒜蓉和大葱花放入爆香
  • 8.随后放入鸡胗片,转大火迅速爆炒
  • 9.接着放入银耳小朵和榨菜碎翻炒至匀
  • 10.保持鸡胗完全褪去血色,即将熟透时,调入盐和生抽,再放入花生碎和香葱拌炒,最后撒入白芝麻
