【蒸蒸日上】无油南瓜蒸蛋糕
2021年做的第一个蛋糕,是无油版的南瓜戚风蛋糕,将油和牛奶换成纯南瓜糊,用了蒸的方式,蒸好的蛋糕更清爽,口感蓬松柔软,营养又健康。

Steps to make 【蒸蒸日上】无油南瓜蒸蛋糕

  • 1.蛋黄蛋清分开(今天碰到两个双黄蛋),盛蛋清的盆要无油无水。
  • 2.南瓜泥和蛋黄放在同一盆,用手动打蛋器搅打均匀。
  • 3.筛入低筋面粉。
  • 4.用打蛋器搅成细腻顺滑的蛋黄糊。
  • 5.蛋清中加入几滴白醋,分三次加入白糖,用电动打蛋器打发至硬性发泡状态,提起打蛋头能拉起直立的尖角。
  • 6.取1/3蛋白霜入蛋黄糊中。
  • 7.用刮刀以不规则手法搅拌均匀。
  • 8.将蛋糊倒回到蛋白霜盆中,继续用刮刀上下翻拌、切拌,使蛋黄糊与蛋白霜充分混合,成细腻的蛋糕糊。
  • 9.倒到八寸蛋糕模中,摔几下震去大气泡。
  • 10.蒸锅中放水烧开,蛋糕模放到蒸帘上,扣上一个盘子,再盖上锅盖中大火蒸40分钟,关火虚蒸5分钟开盖。
  • 11.蒸好的蛋糕轻轻震几下,倒扣在烤架上彻底凉后脱模。
  • 12.蒸起来的蛋糕更清爽,口感蓬松柔软,营养又健康。
