紫薯花朵面包
在传统中,紫色是尊贵神秘的颜色,更有紫气东来一说。紫薯的紫色至深紫色,它除了具有普通红薯的营养成分外,还富含硒元素和花青素,在食物中紫薯属于健康的象征。

  • 汤种85g
  • 鸡蛋液30g
  • 纯净水80g
  • 食用盐2g
  • 白砂糖35g
  • 高筋面粉260g
  • 全脂奶粉20g
  • 酵母粉3g
  • 无盐黄油20g
  • 高筋面粉23g
  • 纯净水101g
  • 紫薯泥180g
  • 白砂糖35g
  • 淡奶油20~30g

Steps to make 紫薯花朵面包

  • 1.首先制作汤种,将高筋面粉和水称量准确,放在小奶锅中。
  • 2.开小火用筷子不断的搅拌以防糊底,当面粉和水成如图所示的糊状即可,室温放凉备用。
  • 3.蒸熟的紫薯泥加糖与淡奶油称量准确,放在容器中。
  • 4.用勺子碾压均匀,呈顺滑状态即可。
  • 5.把面包用料除黄油外,全部用料放在面包机桶内进行揉面。
  • 6.当面团揉至可以扯出厚的筋膜时,再加入黄油。
  • 7.继续揉面至完全扩展状态,放入容器中进行基础发酵。
  • 8.当面团体积为原来的两倍大时,手指蘸面粉中间戳洞不回缩不塌陷即发酵好了。
  • 9.紫薯馅和面团均分为九份。
  • 10.把面团压成圆形,包入一份紫薯馅。
  • 11.收口向下压扁,用刮刀切成如图所示的八个花瓣型,中间不要切通。
  • 12.八个花瓣两两相对,将切面朝上形成了漂亮的花朵状,当然也可以做别的图案。
  • 13.把所有的面包做好之后放入烤箱中进行二次发酵,这时烤箱是没有开的。
  • 14.二次发酵结束后,轻按面包表面可以缓慢的回弹,既为发酵好了,表面刷全蛋液。
  • 15.放入预热好的烤箱,中层上下火180度,烤20分钟。
