Steps to make 解锁黑糖新奥秘 | 脏脏德式布丁塔~

  • 1.黑糖40克+水45克倒入不粘奶锅,将黑糖颗粒压散,盖锅盖,中大火煮到黑糖水完全融合沸腾状态。
  • 2.沸腾状态离火,倒入一半木薯淀粉,筷子快速搅匀,倒入另一半木薯淀粉搅匀,倒出到揉面板上揉成光滑面团。
  • 3.面团搓成长条,切成小块,搓圆。搓好的珍珠放入碗里,撒上适量木薯淀粉,晃匀防黏,筛掉多余的粉即可!密封冷冻,随用随取。
  • 4.准备布丁塔食材。
  • 5.软化好的黄油,倒入糖粉,拌匀。
  • 6.电动打蛋器略微打发蓬松,分3-4次加入全蛋液。
  • 7.打好的黄油糊。
  • 8.筛入低粉。切拌按压成团即可。
  • 9.纸杯排入烤盘,此时预热烤箱上下185度。面团分成45克一个,搓圆放入纸杯。如果用小号纸杯,35-40克即可。
  • 10.面团中间压下,沿着杯壁按压均匀,四周薄一些,底部可以略厚一点。
  • 11.全部压好。淡奶油、蛋黄、炼乳倒入干净盆中。
  • 12.搅打均匀后过筛。
  • 13.均匀倒入,八分满。
  • 14.放入预热好的烤箱中层偏下,180度烤35分钟。小号纸杯170度30分钟左右。
  • 15.烤完取出冷凉。
  • 16.锅里将煮珍珠的水煮开,倒入珍珠,煮至漂浮后继续煮15分钟。捞出到冷水中降温,珍珠会更为Q弹。接着把黑糖50克,水175克倒入不粘锅,大火煮到完全融化,倒入煮好的珍珠,中火搅拌熬煮到糖水变粘稠带拉丝。装入小碗备用。
