  • 杏鲍菇半根

  • 清水少许

Steps to make 翡翠肉卷

  • 1.圆白菜清洗干净。
  • 2.砍掉根部,将外层大叶轻轻剥下来。
  • 3.煮一锅水,放少许盐,滴几滴油,将菜叶入锅煮软捞出。
  • 4.过凉水,菜叶柔软有弹性。
  • 5.肉馅可按喜好来调整,纯肉馅或者荤素的均可。
  • 6.叶片铺平,将鼓起的硬梗削平,根部不规则的部位切掉。
  • 7.适量馅料铺在叶片下端,多少可随意。
  • 8.从下向上卷一圈,再将两侧叶片拍向中间,再卷起来,封口压在下面。
  • 9.将菜卷排排队,码放在盘中,如果有大圆盘,摆成花朵状更漂亮;入蒸锅蒸10-15分钟,根据肉馅中的肉量和馅料多少来调整。
  • 10.蒸出来的菜汁加少许水、蚝油煮开,淋入淀粉浆,待煮到透明状时关火,将芡汁淋在菜卷上,再用枸杞装饰即可。
