浓香海绵小蛋糕
全蛋海绵,妃娟的方子,于全蛋之外添加了蛋黄。香味更加浓郁,颜色更加金黄诱人。

新良蛋糕粉,近来常州网上看到这个品牌。包装颜色很有食欲感。没用过。初看到蛋糕粉三字,以为是蛋糕预拌粉。细看配料一项,只有小麦粉三字。遂放下心来。一直认为,预拌粉是傻子面粉,什么都加得差不多了,没有太大的 发挥空间。而单纯的低筋粉,想做什么都可以。

海绵小蛋糕,装在纸杯里看起来会很漂亮。不过,自家吃,就懒得漂亮了,硅胶模就够了。特意烤个老金黄色。这样的颜色虽然卖相不佳,却是咱家最爱。——那厚厚的皮儿最香。

  • 1.用料:全蛋120克,蛋黄17克,牛奶13克,玉米油13克,细砂糖65克,低筋粉65克
  • 2.将玉米油倒入牛奶中
  • 3.搅打均匀
  • 4.全蛋,蛋黄,细砂糖倒入大碗
  • 5.用打蛋器打发
  • 6.蛋泡浓稠颜色发白,能划出线条,打发完成
  • 7.分三次筛入低筋粉
  • 8.翻拌均匀
  • 9.去少量蛋糊,加入油奶液中
  • 10.拌匀
  • 11.倒回蛋糊中
  • 12.拌匀
  • 13.装入模具
  • 14.放入烤箱,中层,上下火180度,烤20分钟左右
  • 15.表面金黄,出炉
  • 16.稍凉脱模
