Steps to make 蜜汁香芋

  • 1.芋头去皮,清洗干净。改刀切成菱形块装盘备用。
  • 2.蒸锅大火烧开上汽,放入芋头块大火蒸制5分钟。
  • 3.蒸制结束取出晾凉。
  • 4.平底锅中加入一小勺食用油,中小火烧热,放入晾凉的芋头块。慢慢煎制,两面出现微微焦黄,关火码盘备用。
  • 5.煎芋头的锅中加入半碗清水,加入黄冰糖。
  • 6.加入一勺麦芽糖。麦芽糖漂亮的琥铂色可以让熬出来的蜜汁带有诱人的蜜色,而且麦芽糖很粘稠,可以给蜜汁增加粘度。
  • 7.调制少许水淀粉,不要太浓。中小火把糖汁熬开,一边搅动糖汁一边加入水淀粉,汁水变粘稠,像蜂蜜一样的黏度就可以了。
  • 8.把熬好的糖汁均匀地浇在煎好的芋头上,淋上一勺蜂蜜,最后再撒上干桂花即可。
