Steps to make 油面筋酿肉

  • 1.油面筋用小刀划开一个小洞。
  • 2.用筷子头把里面压实,给肉馅留出更过空间。
  • 3.肉馅中加入胡椒粉、五香粉、生抽和葱姜水。
  • 4.加入半个鸡蛋清。
  • 5.加入香油、花椒油和一些蔬菜粒,我用的是芦笋粒,可以根据个人喜好加入,主要是给肉馅增加一些清爽的感觉。搅拌均匀。
  • 6.碗汁调制:半勺老抽、1勺蚝油、1勺料酒、1勺生抽,适量白糖和食盐。
  • 7.锅里加入底油,放入桂皮、八角和葱花煸出香味。
  • 8.加入一碗清水和调好的碗汁,烧开。
  • 9.下入塞好肉馅的面筋球,盖盖焖制6-7分钟。
  • 10.翻个面后继续焖制5-6分钟。
  • 11.分三次勾入芡汁,能挂在面筋上即可。
