【四川】鱼香肉丝
鱼香肉丝是很受欢迎的家常菜,从南到北的餐馆都有这个菜,只是做法不同。
鱼香肉丝,以鱼香调味而定名。鱼香味的菜肴是近几十年才有的,首创者为民国初年的四川厨师。鱼香肉丝的“鱼香”,由泡辣椒、川盐、酱油、白糖、姜末、蒜末、葱颗调制而成。此调料与鱼并不沾边,它是模仿四川民间烹鱼所用的调料和方法,取名为“鱼香”的,具有咸、甜、酸、辣、鲜、香等特点,用于烹菜滋味极佳。

Steps to make 【四川】鱼香肉丝

  • 1.食材:里脊肉、胡萝卜、莴笋、黑木耳、姜、泡椒、小葱
  • 2.木耳放入温水中泡发、洗净切丝。胡萝卜和莴笋去皮切丝
  • 3.里脊肉洗净切成丝,加少许酱油、花椒粉和淀粉抓匀腌制15分钟左右
  • 4.姜剁末,泡椒、小葱切段
  • 5.碗中放入酱油、淀粉、白糖、花椒粉、味精、醋调匀
  • 6.锅中油烧热,放入肉丝,放入泡椒、姜末炒出香味
  • 7.倒入蔬菜丝,大火快炒至断生
  • 8.倒入调好的酱汁,炒匀
  • 9.出锅时撒入葱花即可
