自制辣椒油——凉拌菜标配
云南人喜欢吃辣,但是与湖南的辛辣,成都的麻辣都不同,云南人喜欢吃的辣是香辣~家家户户都有一碗辣椒油,拌凉拌菜吃,拌卷粉吃;吃米线,面条、饵丝都喜欢来上一勺,香香辣辣的,让菜品都多了一丝美味~

    Steps to make 自制辣椒油——凉拌菜标配

    • 1.准备适量的子弹头辣椒;
    • 2.平底锅放一点点油,冷油放入子弹头辣椒,用最小火慢慢煸炒辣椒;
    • 3.等辣椒煸到稍微有一点点糊,能闻见浓浓的辣椒香味的时候,关火,自然冷却~
    • 4.冷却后的辣椒会很脆,用研钵捣碎,放在一个无水的耐热的碗里;锅中坐适量的油,待油热至冒烟,关火,等油放冷30秒左右;
    • 5.将油泼在辣椒上,边加油要边搅拌;
