Steps to make 红焖羊排

  • 1.羊排切成小块,清水洗净。
  • 2.一个葱头去皮洗净,先切一点小粒,剩余的切成大块。
  • 3.羊排凉水下锅,放入少许料酒,姜片,花椒和葱头。开锅后撇去浮沫,(花椒最好开锅去沫后再加入)盖上锅盖中,小火焖至50分钟左右。
  • 4.将羊排捞出,汤汁过滤掉调料。
  • 5.另起锅点火倒油,先放入葱头粒炒香。
  • 6.放入其他调料,炒香。
  • 7.倒入羊排翻炒一会儿。
  • 8.倒入适量的料酒,生抽,老抽,翻炒均匀。
  • 9.将过滤后的汤汁倒入锅中,加入少许的盐,料酒,糖,开锅后改小火焖上一个小时左右。
  • 10.肉熟后改大火收汁。
  • 11.成品。
