凉拌手撕鸡腿

  • 洋葱半个
  • 香菜3-4棵
  • 花椒粒10粒左右
  • 辣椒粉1大勺
  • 姜片4片
  • 半根
  • 小米椒2个
  • 3瓣
  • 料酒2勺
  • 生抽1勺
  • 蒸鱼豉油1勺
  • 1勺
  • 香醋1勺
  • 香油1勺
  • 植物油2勺
  • 少许

Steps to make 凉拌手撕鸡腿

  • 1.水中加入料酒、花椒粒、葱段、姜片,放入鸡腿大火煮开12分钟左右。(具体时间视鸡腿大小)
  • 2.洋葱切丝,香菜切小段。小米椒、蒜切碎。
  • 3.碗中放入辣椒粉,锅中烧热油,浇在辣椒粉中快速拌匀成辣油。稍晾凉加入生抽、蒸鱼豉油、香醋、糖、盐、香油拌匀。
  • 4.再倒入蒜末、小米椒末拌匀成料汁备用。
  • 5.凉开水中倒入适量冰块,将煮好的鸡腿迅速放入冰水中浸泡至凉。
  • 6.去骨撕成小块。
  • 7.倒入洋葱丝、香菜段。
  • 8.倒入调好的料汁拌匀即可。
