小鱼儿蔓越莓绿豆月饼
不到十天就是中秋佳节了,外面琳琅满目的月饼,馅料五花八门,但是外型绝大多数是圆形或者正方形的。有一种月饼叫小鱼儿月饼,当然外面也买不到,因为造型独特,包装盒也难找到,所以想要吃这个特别造型的可爱月饼,就需要自己动手去做了。做法简单,用的是广式月饼预拌粉,不用另外加枧水,只需要加转化糖浆、花生油就可以了。馅料随你喜欢,我这里用的是自制绿豆蔓越莓馅。月饼模具是法焙客 木质月饼模具鱼模。不知道其他品牌有没有,没找过,自己可以上网搜索哈,不发链接。下面分量可以做12条鱼形月饼。做好的月饼,需要回油一、两天再食用,不要心急哟。

  • 广式月饼预拌粉124g
  • 绿豆蔓越莓馅360g
  • 转化糖浆90g
  • 蔓越莓绿豆馅360g

Steps to make 小鱼儿蔓越莓绿豆月饼

  • 1.转化糖浆和花生油放到碗里
  • 2.用手动打蛋器将它们拌均匀,乳化好
  • 3.倒入月饼粉
  • 4.拌成柔软的面团,在碗上面盖保鲜膜,静置1个半小时
  • 5.静置的期间,将绿豆蔓越莓馅料分成30克/个,搓圆,盖保鲜膜备用
  • 6.静置好的饼皮,分成每个20克
  • 7.木质鱼模具洒上玉米淀粉,将多余的粉敲出来
  • 8.饼皮压扁,放上馅料,将饼皮慢慢向上推,收口
  • 9.粘点玉米淀粉防粘,多余的粉拍掉。放入模具里,慢慢推满整个模,用手掌压平一下
  • 10.将模具倒扣,在桌面上敲一下,整个月饼坯敲出
  • 11.移至不粘烤盘上。放进已经预热好上火180度,下火175度的烤箱中下层,烘烤5分钟定型
  • 12.将月饼取出,待冷却一下,在表面刷上薄薄一层蛋黄水。继续烘烤15分钟
