  • 细砂糖40g
  • 吉利丁片5g(一片)
  • 淡奶油300ml
  • 黑巧克力50g(70%)

Steps to make 【香草巧克力鲜奶冻】

  • 1.巧克力调温;吉利丁片浸泡在凉水中
  • 2.蛋黄加入细砂糖搅打
  • 3.加入牛奶继续搅打
  • 4.蛋奶混合物倒入奶锅中,充分混合均匀
  • 5.最小火加热,直到略微黏稠划过刮刀表面出现清晰的痕迹(大约75度左右)
  • 6.泡软的吉利丁片挤干水分后加入温热的蛋奶糊中搅拌均匀
  • 7.加入几滴香草精混合均匀
  • 8.将英式奶油酱分成2份,取其一放入搅拌盆中
  • 9.加入调温后的巧克力,打蛋器在搅拌盆中间缓慢搅拌
  • 10.直到巧克力与英式奶油酱充分混合
  • 11.取150ml淡奶油搅打至6分发状态
  • 12.加入巧克力英式奶油酱中
  • 13.充分拌均匀的巧克力鲜奶冻溶液(这里使用刮刀)
  • 14.取适量巧克力鲜奶冻倒入杯中,作底;冷藏至凝固(大约1-2小时左右)
  • 15.取150ml剩余的淡奶油打至6分发状态,与剩余的1/2英式奶油酱混合
  • 16.取适量,倒入凝固后的巧克力奶冻上层;如此反复叠加即可
