香酥紫薯面包卷

Steps to make 香酥紫薯面包卷

  • 1.香酥粒的做法:黄油从冰箱拿出无需软化,切小块,倒入糖粉、低筋面粉,用手搓成松散状,黄油完全融合到面粉中,装入保鲜袋,放冰箱冷藏
  • 2.除黄油外的所有材料混合成团,稍揉后加入黄油,至出膜,收盆发酵至2倍大
  • 3.发酵好的面团,排气,分割成2等分,揉圆,醒发15分钟
  • 4.醒发后的面团,幹开,一份铺入80克的紫薯泥,留边缘,
  • 5.卷起成柱状
  • 6.一份切割成5等份,装入纸膜中,进行二次发酵,约一个小时
  • 7.二发后,表面刷蛋液,洒香酥粒,入预热180度的烤箱,中层,15分钟即可
  • 8.烤好后,取出放烤架晾凉
