  • 1.准备好食材,然后将蛋黄和蛋白分离,蛋白放入冰箱冷藏备用,再把牛奶、食用油搅拌,放入蛋黄搅拌,再筛入巧克力粉和低筋面粉,继续搅拌至无干粉状态。
  • 2.打蛋白霜前先安装好厨师机的打蛋网,打蛋笼16线加粗打发效果挺不错,如果没有厨师机,也可以用电动打蛋器打蛋白箱。
  • 3.放入冷藏的蛋白,在蛋白里加几滴柠檬汁,开启厨师机高档位开始高速打发。
  • 4.打发蛋白过程中分三次加入白糖,打发至有尖勾状停止,温馨提示中途要注意停下查看状态,我就是没有注意查看,蛋白打发得有点过了,后面烤蛋糕有点开裂。
  • 5.将打发好的蛋白分三次加入蛋黄糊中,与蛋黄糊翻拌均匀,再倒入6寸模具中,轻震几下震出气泡,把表面调整平整。烤箱先130度烤20分钟,再150度30分钟,具体根据每个烤箱的”脾气“调整温度和时间。
  • 6.巧克力戚风蛋糕出炉了,倒扣放晾再装盘,孩子放学回来正好可以大块朵颐。
