酸辣泡鸡爪,云南这边喜欢用柠檬或者酸木瓜这种天然的食材做酸味剂,这次用酸木瓜泡的鸡爪有淡淡的木瓜香气,跟老王边看电视边啃,根本停不下来,哈哈。

  • 1.食材如图。生姜和芹菜中间这货就是酸木瓜啦,酸木瓜不仅可以用来泡鸡爪,来煮酸木瓜鱼,做酸木瓜鸡都超美味的哦。
  • 2.鸡爪子切掉指甲,剁开成两半,清洗干净。
  • 3.起锅,加水,冷水放鸡爪,两三片生姜,大火煮开。
  • 4.水开后把浮沫撇干净,改中火煮6-8分钟。
  • 5.煮鸡爪的时候处理一下配料,酸木瓜去皮,切成片,中间这些黑黑的木瓜籽弃去不要。
  • 6.生姜洗净切丝,胡萝卜洗净切粗条,小米辣洗净切辣椒圈,芹菜掐去叶片只留杆,洗净切成长段。
  • 7.把所有配料放入一个合适的盆中,加200ml左右的白米醋,加两碗纯净水,调入适量的盐,糖和味精,搅拌均匀。
  • 8.盐的用量边加边尝尝看,汁水尝起来要稍微有点咸,这样鸡爪子的咸度才够。
  • 9.调好酸辣醋汁先放一边泡一会儿使配料入味,然后芹菜和酸木瓜的味道也会进入到醋里面。
  • 10.鸡爪煮七八分钟就差不多了,鸡爪子煮过头泡的时间久了会变软。
  • 11.煮好的鸡爪用流动的冷水多冲洗几遍洗掉鸡爪上的胶质,直到水是清的。
  • 12.把鸡爪放之前拌好的酸辣醋汁中,拌匀。
  • 13.保鲜袋中加水,封口,多加几层防止漏水,放在鸡爪上,这样鸡爪都能浸泡在醋里面。加盖保鲜膜放冰箱冷藏一晚上。
  • 14.泡好的鸡爪,酸辣爽口,追剧必备!
