香辣羊锅
又到了可以火辣辣吃羊肉的季节。今天这道颇具西北风味的香辣羊锅,可是下饭涮锅两相宜——多炖一会儿,收干汤汁,就是一道火辣过瘾的下饭菜;多加汤汁,准备一点儿蔬菜、豆腐、海鲜之类,就是一个热辣辣的香辣火锅汤底。绝对值得一试哦!

  • 新鲜羊肉500g
  • 土豆1个
  • 洋葱1个
  • 青红辣椒各一个
  • 干红辣椒6粒
  • 油泼辣椒2大勺
  • 花生油2大勺
  • 花椒面1小勺
  • 五香粉1小勺
  • 老抽1小勺

Steps to make 香辣羊锅

  • 1.羊肉切核桃大块;
  • 2.处理和准备好辅料:
  • 3.凉水入锅,加入花椒、桂皮、香叶和适量葱姜,并1小勺料酒,大火煮开后转中小火煮约30分钟,关火后焖15—20分钟;
  • 4.捞出羊肉,取出调料,沥干水分备用。
  • 5.起炒锅,加入花生油,热锅凉油爆香葱姜蒜;
  • 6.下入羊肉煸炒,至去除水气,表面金黄;
  • 7.加入干红辣椒,煸炒均匀;
  • 8.下入花椒粉和五香粉,煸炒均匀;
  • 9.加入老抽1小勺;
  • 10.下土豆和洋葱,煸炒均匀上色;
  • 11.加入料酒,多一点儿,我加了大约2大勺,翻炒均匀;
  • 12.加入适量开水,没过肉块,
  • 13.同时加入油泼辣椒,搅拌均匀,加盖焖煮约10分钟至土豆软烂;
  • 14.加入青红辣椒,煸炒均匀后再炖2、3分钟;
  • 15.加入少许盐调味,关火;
  • 16.盛入盘中,撒上香葱粒即可。
