巧克力淋面蛋糕
生日蛋糕平时做得不多,只有家人过生日的时候才会做一次,所以这裱花技术真的是无语了,还好这款巧克力淋面蛋糕,不用裱花,也不需要精致的抹面,一样可以看起来高大上,很适合和我一样的新手宝宝哦。

  • 低筋面粉90克
  • 淡奶油450克
  • 白糖40克
  • 巧克力40克
  • 巧克力棒棒2根

Steps to make 巧克力淋面蛋糕

  • 1.先来准备蛋糕体所需要的食材。
  • 2.鸡蛋蛋白与蛋黄分离,分别盛放在干净无水无油的容器里,蛋黄加玉米油、牛奶、糖搅拌均匀,再筛入低筋面粉拌匀,切忌画圈搅拌。
  • 3.蛋白加入白糖用厨师机打发,打发时间大约在3—4分钟左右,出现这种小尖钩即可。
  • 4.取1/3的蛋白加入到蛋黄糊里翻拌均匀,再全部倒回到蛋白中,继续翻拌均匀,将拌好的面糊倒入模具中,8寸模具一个就够了,6寸模具需要2个。
  • 5.烤箱预热,165度上下火,中层烤1小时左右。
  • 6.出炉倒扣晾凉,完全凉透后脱模,再将蛋糕切成3片。
  • 7.淡奶油400克加入40克白糖打发至出现小尖钩,用来做蛋糕夹层和抹面。
  • 8.一层蛋糕片,抹一层奶油,再一片蛋糕片,一层奶油,最后蛋糕表面再抹上一层奶油,因为还需要淋面,所以不需要抹得太仔细,放入冰箱冷藏30分钟。
  • 9.巧克力加入等量的淡奶油隔水融化且搅拌均匀,然后放凉至手温装入裱花袋里。
  • 10.水果选取自己喜欢的,清洗干净,擦干水分备用。
  • 11.将巧克力甘纳许慢慢沿着蛋糕顶层周边淋下,巧克力甘纳许就会慢慢自然流下。
  • 12.再把水果和巧克力棒棒一起装饰到蛋糕上,巧克力淋面蛋糕就完成了。
