照烧鸡腿饭
照烧是日文Teriyak的中文直译法,简单说也就是加了酱油和糖的调料汁,翻炒后挂在食材的表面,形成亮亮的糊糊。

  • 鸡腿两个
  • 胡萝卜一段
  • 米饭一碗
  • 酱油30克
  • 蚝油30克
  • 白糖10克
  • 0.5克
  • 料酒少许
  • 植物油少许
  • 黑胡椒粉3克

Steps to make 照烧鸡腿饭

  • 1. 两个鸡腿准备好
  • 2.纵向剖开
  • 3.环绕着小骨那边将皮肉割开,用手将肉往大骨那边扒开
  • 4.再用刀将大骨处的皮肉割开,两块鸡腿肉就完整的剥下来了
  • 5.鸡肉入小盆中,根据口味倒入酱油、蚝油、白糖、黑胡椒粉、料酒、盐
  • 6.充分混合均匀,腌1小时以上,中途可翻几次身,便于入味
  • 7.腌肉快结束时,可以将少许的西兰花、胡萝卜片焯水,过凉备用
  • 8.平底煎锅中放少许油,中火,先将鸡皮那面朝下,煎出油后,再煎另一面;两面交替着煎,直到鸡肉成熟取出,晾一晾后可以切成条,也可以不切
  • 9.腌肉汁倒入锅中,小火煮开
  • 10.将切好的鸡肉条重新入锅中,均匀地裹上酱汁便可出锅
  • 11.将米饭入盘中,摆上照烧鸡腿、西兰花、胡萝卜片
  • 12.香香的鸡腿饭,开吃喽
