【徽菜】---朱洪武豆腐
朱洪武豆腐也叫凤阳酿(rang读一声)豆腐,是沿淮地区传统名菜
因朱元璋而得名,并且闻名于世。
相传朱元璋做和尚的时候化缘于一家豆腐店外,老板送了他一块这种酿豆腐,为此朱元璋当皇帝后念念不忘,后找人入宫做此豆腐甚是爱吃喜欢,由此而名扬大江南北。
此菜是豆腐夹馅,虽炸犹嫩,色奶黄,鲜香适口,带着一些微微的酸甜。
也是一道补虚养身,对骨质疏松有着调理作用的食疗佳品。

  • 虾仁50克
  • 鸡蛋清3个
  • 淀粉5克

  • 生姜汁3克
  • 料酒10克

Steps to make 【徽菜】---朱洪武豆腐

  • 1.准备好所有的食材。
  • 2.豆腐用淡盐水浸泡备用。
  • 3.青虾剥去皮成为虾仁,和猪肉一起剁碎。
  • 4.加入少许葱花,盐,鸡精,姜汁,料酒和少许水搅拌均匀成为馅料备用。
  • 5.鸡蛋取蛋清备用。
  • 6.把豆腐片成薄片,两片中间加入蚕豆大一块调好的馅料。
  • 7.依次全部做好。
  • 8.鸡蛋清搅打呈泡沫状,加入淀粉成为蛋清糊。
  • 9.把豆腐夹放入蛋清糊中裹均匀。
  • 10.锅中油烧热,放入豆腐夹炸制微黄捞出。
  • 11.然后再次入锅复炸一遍至金黄摆盘备用。
  • 12.炒锅爆香葱姜。
  • 13.倒入清水150克,加入白糖煮至起泡。
  • 14.在加入香醋和少许鸡精。
  • 15.搅拌均匀后加入适量的水淀粉勾薄芡。
  • 16.把煮好的料汁浇在炸好的豆腐上即好。
