抹茶冰皮月饼

  • 粘米粉35g
  • 澄粉25g
  • 白糖20g
  • 牛奶160g
  • 玉米油20g
  • 抹茶粉1g
  • 绿豆沙600g

Steps to make 抹茶冰皮月饼

  • 1.糯米粉50g,粘米粉35g,澄粉25g,白糖20g,牛奶160g,玉米油20g,抹茶粉1g称好备用。
  • 2.牛奶中加入玉米油和白砂糖搅拌均匀。
  • 3.再加入所有粉料搅拌均匀。(尽量不要有粉疙瘩,可以用勺子压或者用手捏匀)
  • 4.隔水蒸3调好的冰皮料,蒸的过程要搅拌几次至呈固态。
  • 5.呈固态后继续蒸10分钟。
  • 6.蒸熟拿出冷却。(注意要盖保鲜膜防止硬化)
  • 7.绿豆沙35g一份团成球形。
  • 8.炒熟的手粉备用。
  • 9.抹茶冰皮15g一份,用手掌压扁压薄。
  • 10.在冰皮中间放一个绿豆沙球。
  • 11.借助虎口的力量团成月饼球,放手粉上滚一下防止沾手沾模具。
  • 12.最后先用软刷刷去多余的手粉,再用模具压成月饼即可,保鲜盒装盒冷藏,冰皮月饼不宜久放,2、3天内吃完。(这次用的是kitty猫的模具)
