豆沙馅---全部面点都能用上的馅料

红豆馅,是我们家最常用也是小家伙们最喜欢的馅料。自己做的馅料,口感细腻,并且健康,吃得放心。
这回做的红豆沙,鱼还专门用滤网把红豆的外壳滤,在炒的时候加了红糖和麦芽糖,口感特棒,刚炒好的时候,小家伙竟然以为是巧克力粉,就这么捧着吃了大半碗......

Steps to make 豆沙馅---全部面点都能用上的馅料

  • 1.把所有材料准备好。
  • 2.红豆挑去杂质、坏豆,用清水泡一个晚上。
  • 3.放进高压锅中,加入适量清水(如果放在高压锅中的话,水不要放的太多,水的分量大约比豆高2厘米左右就行了)。
  • 4.盖上锅盖,压20--30分钟(瞧,豆子全部吸收水分,几乎没有多余的水分)。
  • 5.开始滤豆沙了,在滤网下面放一盆水,再把滤网担在盆上面,放进煮好的红豆,用匙子揉红豆,把红豆搓烂,这样豆沙就会漏进水里。
  • 6.取一条纱布,把豆沙和水的混合物倒在纱布上面,包好,提起,用手使劲拧出水分。
  • 7.然后可以开始炒豆沙,锅洗净,加入小许猪油,猪油溶化后倒入拧去水分的豆沙。
  • 8.转中小火,加入1/3的红糖,炒匀后再加入剩余红糖。
  • 9.直至炒到豆沙水分差不多挥发完毕时,加入麦芽糖。
  • 10.不停地翻炒,炒至水分完全挥发,感觉豆沙有些粘稠,并且感到阻力变大即可。
  • 11.凉透后可以放进冰箱里冷冻,用的时候提前取出即可。
