豚肉の生姜焼き(猪肉生姜烧)
这道菜也是荣获日本人气前十位之一的菜谱。
俗话说“冬吃萝卜夏吃姜,不劳医生开药方”,生姜自古被认为有延年益寿的功效。
其实不仅在夏天,生姜一年四季都可食用。它有增进食欲、镇吐、活血驱寒的功效。特别在炎热的夏季,有兴奋、排汗降温、提神、抗菌的功效。常食生姜还能延缓衰老。
这道菜主要是用生姜汁配合里脊瘦肉(优优这次选用的是鹿儿岛县产的黑宝猪猪肉)、再和洋葱、青椒一起炒。营养开胃,美味健康。

Tips:生姜汁,优优是直接用了以前就做好的生榨姜汁,这样就不用临时每次都去榨姜汁了,简单方便,要用的时候从冰箱取出,直接倒出使用即可。(但如果生姜汁要储存的话,需要配合柠檬和蜂蜜,这个我下一道菜谱分享出来,如果喜欢优优的菜谱,请关注优优,优优会陆续更新的,嘻嘻!)

Details of ingredients

  • 猪瘦肉片200g(里脊肉为佳)
  • 洋葱1个
  • 青椒小的2个(大的1个即可)
  • 大葱1根
  • 猪肉腌料汁适量(酱油+酒+味醂+姜汁)
  • 酱油30g
  • 日本酒30g(或料酒)
  • 味醂30g
  • 生姜汁30g
  • 橄榄油20g(或者食用油)

Steps to make 豚肉の生姜焼き(猪肉生姜烧)

  • 1.准备材料,如果没有现成的姜汁(优优是使用已制好的生榨姜汁),可以自己来制作,首先将生姜去皮后用擦泥器擦成泥,擦泥的时候下面垫一个小碗,因为擦泥过程中,也会流出姜汁,所以用小碗托着,姜汁就不会浪费,可以直接流到小碗里。然后找一片消过毒的纱布包裹好所有的姜泥和姜汁,过滤到一个新的干净的小碗里。大概取30g左右姜汁即可。
  • 2.然后将酱油、酒、味醂、生姜汁混合成腌料汁,将肉片混合腌料汁,腌制15分钟左右。腌制的时候,你就可以开始准备其他材料,将洋葱、青椒洗净,都切成块状。大葱切成斜条状备用。
  • 3.等肉片腌制好后,将锅加热,倒入橄榄油,将肉片连同腌料汁一起倒入锅内,不断翻炒,直到肉变色。
  • 4.接着加入洋葱片、大葱段一起翻炒,中途尝尝味道,再决定要不要加椒盐,加多少,加入后翻炒至入味即可。
  • 5.最后加入青椒,再翻炒片刻即可。
