Steps to make 剁辣椒鱼块

  • 1.鱼让卖鱼的大叔帮忙整理好,切好,回来冲洗下,沥干水,防止油溅出来,还有就是水是腥味的
  • 2.热锅里倒油,稍多一点,然后下鱼块煎至两面泛黄。
  • 3.煎好的鱼块放一边
  • 4.锅里放油,下葱、姜爆香
  • 5.加入剁辣椒(量根据自己的吃辣能力)
  • 6.放少许清水(无需没过鱼块哈,汤不宜过多),一点点白糖、料酒,酱油。中途轻轻翻面(整个烧鱼的过程,除了煎鱼跟这会儿需要翻动下鱼之外,其他时间都不要去翻动,这样鱼会完整),换一面,盖上锅盖中火煮5分钟入味(根据自己的鱼块大小稍稍增减时间,我这个鱼块个人觉得算大的了)
  • 7.最后加葱花,锅里的汤汁收的差不多了,就可以出锅了。汤汁多点也没关系,用来拌米饭吃,绝配啊
