    • 1.将买来的草鱼剖开,去除肚子里的内脏和鱼鳞、鱼鳍,还有鱼尾也要去掉。直到这条鱼变成一条鱼棍。
    • 2.洗干净,放在一旁等待鱼身上的水全部干了。大概一个小时以后,用干净的毛巾吸取鱼身上和鱼肚中残留的水分。这两步让鱼变干的步骤很重要,水是导致鱼在制作过程中散架的罪魁祸首。把鱼剁成小块,鱼头不要。
    • 3.加入姜末和盐将鱼块腌制起来,一是入味;二是去腥。之所以从篮子里将鱼倒进锅里是为了方便把鱼和姜末、盐充分混合,混合完以后还是将鱼块倒回篮子里。
    • 4.将鱼腌在一旁,我们开始调一份特别的调料。需要的材料有很多:姜末、葱末、酱油、醋、白糖、味精、花椒油、油辣椒,当然图中只是告诉大家调料有哪些,分量多少不做参考,在看完整个步骤以后您就会明白大概自己需要怎么样进行调料。
    • 5.鱼块腌制6个小时以后就可以开始炸了。将鱼块放入滚油中,千万不要老是去翻动油锅中的鱼块,会很容易弄碎的。
    • 6.待两面都炸成金黄色以后,就可以将油锅中的鱼块直接放进调好的调料碗里,这时鱼块会不断冒泡并发出滋滋声,这是鱼块在吸收调料的味道。此乃“熏鱼”之真谛。
    • 7.这边鱼块在调料碗里进味,另一边开始新一轮的鱼块油炸进行时,等新的快炸好时,第一拨的就可以从调料碗里盛出装盘了。
    • 8.美味的熏鱼就做好了,堪比大师级水平的菜肴,菜鸟也一样可以做!你呢?
