红烧排骨

Steps to make 红烧排骨

  • 1.排骨剁成均匀段。
  • 2.起锅烧水,冷水将排骨淖水,放入一勺料酒去腥,开锅后撇去浮沫,煮制两分钟,捞出清洗干净,如图所示。
  • 3.冰糖备用。
  • 4.姜洗净,切片。
  • 5.葱洗净,切段。
  • 6.干辣椒备用。
  • 7.锅烧热放入少许花生油,放入冰糖粒煸炒,中火将冰糖炒化,冰糖炒化颜色呈微黄,不用炒成糖色。下入淖好水的排骨,下入葱姜干辣椒煸炒,炒至糖挂匀排骨、再放入一勺料酒、一勺生抽、半勺蚝油、加入开水,放入半勺老抽调色。
  • 8.开锅后盖上锅盖,转小火炖制一个小时,开始收汁,收汁时放入盐,不勾芡,自然收汁,汤汁收至粘稠,均匀的包裹上排骨。
  • 9.出锅装盘。
  • 10.又粘又腻的口感。
