  • 蛋清160克
  • 细砂糖75克
  • 低筋面粉90克
  • 玉米油60克
  • 牛奶85克
  • 20克
  • 红曲粉5克
  • 淡奶油180克
  • 细砂糖(奶油)18克
  • 柠檬汁4滴
  • 甜菜果蔬粉少许

Steps to make 红丝绒旋风蛋糕卷~(法帅蒸烤箱做法)

  • 1.玉米油和牛奶用手动打蛋器混合乳化。
  • 2.低粉筛入油奶混合物内。
  • 3.手动打蛋器横切手法拌匀。
  • 4.磕入蛋黄,蛋白放入冰箱冷冻备用。
  • 5.拌至顺滑的蛋黄糊。
  • 6.蛋清内滴入柠檬汁,分三次将细砂糖加入蛋清内,打发至8成(小弯钩)。
  • 7.取三分之一的蛋白和蛋黄糊用翻拌的手法混合均匀。
  • 8.再将拌好的蛋糕糊倒入剩余的蛋白内,同样手法拌均匀。
  • 9.最后的蛋糕糊细腻无明显的气泡。
  • 10.28x28的方形烤盘内抹上一层薄薄的玉米油,倒入一半的蛋糕糊,轻震去气泡。
  • 11.红曲粉和水混合均匀,加入到剩余的蛋糕糊内。
  • 12.利用刮刀随意拌几下。
  • 13.装入裱花袋内。
  • 14.均匀地挤入刚才的原味蛋糕糊上,铺满整个烤盘。
  • 15.准备一根细的筷子,从烤盘的一角开始画。
  • 16.按图案的顺序来回划好线条。
  • 17.蒸烤箱设置上下火功能,预热160度,上下火中下层28分钟。
  • 18.出炉轻震几下。
  • 19.盖上油纸倒扣出来,盖上烤盘备用。
  • 20.淡奶油加细砂糖打发至裱花状态,均匀地抹在蛋糕表面,1/3处摆放上切成小方块的芒果粒。
  • 21.借助擀面杖卷好蛋糕卷,冰箱冷藏一晚。
