  • 低筋面粉60克
  • 玉米淀粉5克

Steps to make 果酱蛋糕卷

  • 1.牛奶加入油,搅拌均匀
  • 2.加入过筛后的面粉,上下翻拌均匀无颗粒
  • 3.蛋白蛋黄分离。蛋黄打散,加入面糊中,上下翻拌均匀无颗粒
  • 4.蛋白加入几滴白醋,淀粉5克,打至干性发泡。(提起打蛋器,蛋白能拉出一个短小直立的尖角,就是干性发泡。)
  • 5.盛1/3蛋白到蛋黄糊中,上下翻拌均匀
  • 6.再把蛋白全部倒入蛋黄糊中,上下翻拌均匀
  • 7.倒入烤盘,在桌上震两下,把内部的大气泡震出来
  • 8.烤箱预热,180度,第二层,15分钟。取出后立即倒扣,撕油纸
  • 9.涂抹山楂果酱,卷起
