芥末荞面饸饹
荞面饸饹分为热的和凉的。热的荞面饸饹是以荞面、羊肉、土豆、香菜等为主要食材制作的美食。是陕西省著名的传统面食小吃。凉的荞面饸饹是用芥末,黄瓜,大蒜等调料凉拌,芥末是必不可少的。炎炎夏日当然是吃凉拌的饸饹才解暑。

Steps to make 芥末荞面饸饹

  • 1.取适量芥末粉,放入碗中。
  • 2.加入开水,芥末粉和开水的比例约为1:2,搅拌均匀,盖盖,闷20分钟左右。
  • 3.烧一锅开水,水开关火。放入荞面饸饹,搅拌一会,盖上盖子,闷10分钟。切记,不能煮。
  • 4.黄瓜洗净,切丝。
  • 5.大蒜洗净,磨成蒜泥,加入适量凉开水。
  • 6.把醋和凉开水按照1:4的比例兑好备用。
  • 7.泡好的荞面饸饹用凉开水过凉,沥干水分。
  • 8.将荞面饸饹,黄瓜丝放入大碗中,加入盐,大蒜水,醋水,花椒粉和辣椒油,搅拌均匀即可。
  • 9.夏天来一碗真是惬意。
  • 10.最后附一张荞面饸饹的真容。
