中式点心-【五仁小酥饼】
最近败了个厨房秤,想有时间好好地玩玩烘焙,这次大赛叫我开了眼界
自己以前没有称,所以只做过面包还都是凭经验,没有方子只能凭感觉做出来的真是不入法眼

有了厨房秤那就心里有谱多了,可以照着方子做了,那就拿中式点心开刀吧
最喜欢吃五仁馅儿的,我做的这个具体上“官方”叫什么不知道。
暂且我就叫它“五仁小酥饼”吧

自己参考原方子稍作改动,做出来非常的成功,大家喜欢可以试试

    Steps to make 中式点心-【五仁小酥饼】

    • 1.先熬猪油,猪板油一斤
    • 2.切丁
    • 3.倒入锅中小火煸炒
    • 4.、炒到水分慢慢丧失
    • 5.油渣子漂浮到上面
    • 6.倒入容器中放凉即可
    • 7.准备水油皮材料,中筋面粉120g,糖15g,水50g,猪油30g
    • 8.油酥材料:猪油50g,面粉100g
    • 9.混合揉匀两个面团盖上保鲜膜醒20分钟1
    • 10.准备馅儿料,真正的五仁啊,剥皮剥了一个小时
    • 11.果仁碾碎,不要太碎了也,
    • 12.加入蜂蜜,熟面粉,花生油适量,白糖50g和成馅儿料
    • 13.把醒好的俩面团,各分成12个剂子
    • 14.水油皮用手推慢慢包上油酥面团
    • 15.盖上保鲜膜醒10分钟
    • 16.整形,先擀成牛舌
    • 17.卷起
    • 18.醒15分钟
    • 19.再次顺长擀开
    • 20.卷起醒10分钟
    • 21.两边折起来
    • 22.擀成皮
    • 23.慢慢向上推包馅儿
    • 24.收口
    • 25.放入烤盘,烤箱预热170左右刷蛋液撒芝麻,烤箱中层170度左右25-30分钟
