  • 细砂糖15克
  • 淡奶油100毫升

Steps to make 北海道小蛋糕

  • 1.准备食材。
  • 2.蛋清蛋黄分离,蛋清冰箱冷藏备用。玉米油+牛奶混合均匀充分乳化,过筛低筋粉,Z字形搅拌均匀,加入蛋黄混合均匀。
  • 3.蛋清分三次加入糖打至大弯钩,第三次可加少许柠檬汁去腥。
  • 4.取1/3蛋白霜到蛋黄糊,呈J字型翻拌均匀,再倒入剩余蛋白霜翻拌均匀。
  • 5.挤入纸杯6-7满,烤箱预热好后125度30分钟,再140度15分钟。
  • 6.淡奶油打发至酸奶状,然后加入卡仕达酱混合打发,再装入裱花袋中。
  • 7.蛋糕放凉后,可用筷子轻戳个小洞挤入卡仕达奶油。
