全手工打造“免烤、无油、无脂、低糖、健康”的【紫薯月饼】
相比之广式、苏氏月饼的高油、高糖、高脂,这款【紫薯月饼】貌似用料更简单健康,操作起来也不难。

材料只用到【紫薯】、【糯米粉】、【花生仁】、【核桃仁】、【蜂蜜】五样食材,完全无油、无脂、而且低糖。另外,没有烤箱的童鞋也不要捉急,因为压根用不着。


担心光用紫薯难以成型,所以加了一点糯米粉(后来又加了一点澄粉,粘米粉我家没有,要不就是【冰皮紫薯月饼】了),蒸熟后用来做皮,馅料是花生和核桃打碎,淋入一勺蜂蜜,不是很甜,灰常健康、零添加、无需烤箱的【紫薯月饼】就做得了!

Steps to make 全手工打造“免烤、无油、无脂、低糖、健康”的【紫薯月饼】

  • 1.1、将紫薯洗净外皮。
  • 2.2、入凉水锅蒸,上汽后蒸上20分钟。(还可以用微波炉高火,5、6分钟就可以搞定)
  • 3.3、蒸好的紫薯取出。
  • 4.4、稍微凉一下,不太烫手时剥去外皮,放入盆中,将整个紫薯先搓捻成小碎块。
  • 5.5、再用勺子的背面,顺着盆子壁将紫薯捻成细蓉。(也可以将紫薯倒入保鲜袋中,用擀面杖擀碎)
  • 6.6、加入一勺半糯米粉,少许蜂蜜。
  • 7.7、搅拌均匀。这个时候看起来紫薯粉有点儿干,不要紧,宁干勿湿。
  • 8.8、蒙上保鲜膜,放入蒸锅中。大火烧开锅里的水,然后转中小火,15——20分钟。
  • 9.9、接下来,准备馅料。花生仁和核桃仁用微波炉“快速加热键”,打4、5分钟至熟。
  • 10.10、用料理机打碎,不要太碎,小颗粒状为佳,调入适量蜂蜜。
  • 11.11、蜂蜜的量以能够让花生核桃粉集结成团儿为准,依旧是“宁干勿湿”,搅拌均匀。
  • 12.12、用手将馅料搓成小圆球,为的是一会儿方便包制。
  • 13.13、馅料做好了,紫薯 糯米粉制成的面团也可以出锅了。
  • 14.14、根据月饼模子的大小,揪上一坨面团,反复揉匀,先搓成一个圆球,再压扁,然后将馅料放在中间。
  • 15.15、将面皮从下往上轻轻推,用力要均匀,不要急,慢慢聚拢。
  • 16.16、最后收口,滚圆。
  • 17.17、光面朝下,放入月饼模具中。
  • 18.18、用手掌按压平整。
  • 19.19、压动模具,将月饼取出。翻过来,一个纹路清晰完整的【紫薯月饼】就做好了。
  • 20.口感软糯,馅料也不是很甜,但非常的香~~ 完全手工打造 做起来没有任何难度、吃起来也没有太多的负罪感,怎么样,动心了没?
