  • 全蛋75g
  • 蛋黄21g
  • 砂糖22.5g

Steps to make 焦糖布丁

  • 1.准备好原材料,把22.5g砂糖、15g水称好放锅里
  • 2.牛奶、淡奶油、40g细砂糖称好,倒在同一个容器中,备用
  • 3.全蛋、蛋黄称好备用
  • 4.用手动打蛋器把蛋液打匀,尽量不要打起泡,然后过筛2次
  • 5.把用来烤布丁的容器边缘抹上黄油,以便脱模
  • 6.熬煮糖浆,小火慢煮
  • 7. 煮到有焦糖色的时候,端起来晃匀,不要煮过了
  • 8.把焦糖倒入陶瓷杯中
  • 9.此时奶液加热到砂糖融化,放凉至40°左右
  • 10.预热烤箱,上下火145°
  • 11.奶液倒入蛋液中,过筛2次
  • 12.把过筛好的布丁液倒入陶瓷杯中,烤盘注入1.5厘米高的温水
  • 13.放进烤箱中,上下火145°烤50分钟
  • 14.出炉后要第一时间把陶瓷杯从热水中取出,放凉,冷藏一夜之后再脱模
