  • 2.腐竹切寸段,入开水锅中煮10秒,捞出过两遍凉水;如果用干腐竹需要提前数小时泡发,入开水焯烫20秒捞出过凉水。
  • 3.胡萝卜切薄片,黄瓜切薄一点儿的滚刀块,黄瓜芯质软易出汤就不放这道凉菜中了,切下来后直接生食;小葱切末,大蒜剁碎。
  • 4.胡萝卜、黄瓜、葱末、蒜末同入大碗中,倒适量生抽、醋,撒少许盐。
  • 5.拌匀,腌制10分钟,胡萝卜片稍变软入味,黄瓜汁能被腌出一些。
  • 6.腐竹入碗同拌,料汁中带着清香的黄瓜汁,将腐竹充分浸润,柔软多汁入味。
