祝大家中秋快乐——玉米马蹄冰皮月饼
今天是中秋,2013的中秋,又一个不一样的中秋……

记得前年中秋我开始自己学习做月饼,虽然一开始做的月饼总是会出现这样那样的问题,但什么都无法阻挡咱“滴爱歪”的热情。

我玩我爱,我开心!·

就是这么简单,开心最重要!

今年9月16号参加一场考试,之前一直忙于临时抱佛脚。考试结束后也就是中秋前两天才开始准备做月饼。时间比较工仓促,因此除了五仁馅外其他月饼馅都是买现成的,感觉还是过份甜腻了一些。

于是,在月饼饼皮上我就稍注意了一些,减少了糖的用量,这样吃起来好坏是能中和掉一些甜度的。

今天的这款冰皮月饼只是因为稍稍添加了一些色彩,便有了完全不一样的生命。

绚丽多彩,让人爱不释手。

这正像极了我们平常的生活,稍稍多一些变化,便会更美丽,更完美!

西安今天下雨了,晚上可能无法观赏美丽的月亮了。没关系,人都说十五的月亮十六圆,那么,明天晚上我们再来观赏更圆更亮的十六的月亮吧!

  • 澄面100克
  • 糯米粉50克
  • 玉米马蹄馅264克
  • 糯米粉10克(用于处理模具)
  • 牛奶150克
  • 玉米油25克
  • 火龙果汁少许
  • 绿菜汁少许
  • 熟南瓜泥少许
  • 白糖20克

Steps to make 祝大家中秋快乐——玉米马蹄冰皮月饼

  • 1.所用原料,因为是临时决定做成彩色的,所以没有拍各种用于上色的蔬果汁。
  • 2.白糖倒入牛奶中,搅拌至糖完全融化。
  • 3.然后把牛奶倒入玉米油中,搅打均匀。
  • 4.全部澄面和50克糯米粉拌匀,倒入汁3中。
  • 5.用刮刀搅拌至顺滑无结块。
  • 6.上锅蒸15分钟,期间搅拌两次,蒸至无水分即可。
  • 7.做好的冰皮面团晾凉,分成30克一个的剂子,馅也分成约33克的剂子,分别团成球状,盖上保鲜膜防止干裂。
  • 8.剩余的冰皮面团分成三小份,分别用果蔬汁处理成彩色面团加盖保鲜膜备用。
  • 9.取一个冰皮面团用手掌压扁,放入一个玉米马蹄馅球。
  • 10.包制好,收口,团圆。
  • 11.剩余10克糯米粉倒入锅中微火炒至微微发黄,晾凉备用。
  • 12.取模具和花片,倒入炒熟的糯米粉,转动,然后倒掉多余的粉。
  • 13.按自己喜欢的颜色把模具花纹中先装上彩色面团。
  • 14.模具花片装入模具中,然后把包好的冰皮月饼球放入。
  • 15.在平整的平面上按压,然后取掉模具,一个美丽的冰皮月饼就诞生啦!
  • 16.如此方法,可按个人喜好做出不同好看又好吃的冰皮月饼来!
