凉拌藕片
莲藕平常多用来炖汤喝,炎热的夏天,适合酸酸辣辣的凉拌藕片。

  • 莲藕2个
  • 小米辣1个
  • 2根
  • 香菜1把
  • 白芝麻1勺
  • 蒜头半个
  • 辣椒面1勺
  • 孜然粉1勺
  • 生抽2勺
  • 香醋1勺
  • 白糖半勺
  • 蚝油1勺

Steps to make 凉拌藕片

  • 1.准备2个莲藕。
  • 2.把莲藕削皮切成薄片
  • 3.莲藕清洗2遍,洗掉淀粉。
  • 4.把莲藕泡在清水中,加适量白醋,可以防止莲藕氧化变黑。
  • 5.准备食材。香菜和葱洗净切碎,蒜头剁碎,小米辣切圈
  • 6.锅里烧点清水,水开后倒入藕片。
  • 7.焯水3分钟,焯好捞出过凉水,再浸泡在凉水中。这里的凉水都是凉白开或者矿泉水,不能用生水。
  • 8.准备一个小碗,倒1勺辣椒面,1勺孜然粉,一勺白芝麻,适量蒜末和小米辣。
  • 9.淋上滚烫的热油激发出香味
  • 10.倒2勺生抽,1勺香醋,1勺蚝油,半勺白糖,适量葱花,搅拌均匀。
  • 11.把藕片捞出沥干水分装到盆里,撒上香菜。
  • 12.把凉拌汁倒入,搅拌均匀。
  • 13.成品。
