长颈鹿蛋糕卷

Steps to make 长颈鹿蛋糕卷

  • 1.10克可可粉,用20克热水化开备用。
  • 2.蛋黄、蛋白分别打到两个无油无水的盆子里。蛋黄盆里加50克牛奶、40克玉米油、拌匀,加入50克低筋面粉,拌匀备用。
  • 3.这时先用180度预热烤箱,然后蛋白中加入几滴柠檬汁或白醋,用电动打蛋器打到湿性发泡,提起打蛋器,拉出一个小弯钩,就是湿性发泡了。然后先将三分之一蛋白加入蛋黄糊里,切拌均匀,再加三分之一拌匀,总共分三次将蛋黄糊和蛋白糊拌匀。
  • 4.将拌匀的面糊装一勺进裱花袋,在铺了油纸的烤盘上挤长颈鹿纹路,放进预热好的烤箱里烤一分钟,取出。
  • 5.剩下的面糊里加入调好的可可糊拌匀。倒进烤盘,表面抹平,端起烤盘,在桌面上轻摔几下,摔出面糊里的大气泡。放入烤箱中层,烤15分钟。
  • 6.取出烤好的蛋糕,放在烤网上晾凉,用另一张干净的油纸将蛋糕片翻个面,撕去底下的油纸,抹上草莓酱,晾凉后卷起来。
  • 7.卷好后用油纸包起来放置半小时定型。
  • 8.成品图,非常美丽的蛋糕卷
