海南鸡饭 【芸芸小厨】
一碗鸡汤,一碗米饭,一碟鸡肉,一碟蘸鸡料,海南鸡饭的美味俘获了太多人的味蕾。今天我家的晚饭就是海南鸡饭,虽然稍微费时,但是美味绝对不会辜负时间。
海南鸡饭,顾名思义起源于海南。海南人以文昌当地的白切鸡做法,同时配以鸡油烹煮的米饭,所以在海南岛俗称为文昌鸡饭。20世纪初期,随着移民潮,这个菜式传至东南亚,在包括马来西亚、新加坡及泰国等地发扬光大。

  • 辣椒2个
  • 香叶2片
  • 大蒜半头
  • 料酒少许
  • 少许
  • 鸡饭老抽少许

Steps to make 海南鸡饭 【芸芸小厨】

  • 1.将鸡腿流水冲水去血水。
  • 2.锅中加水,加入姜片、葱、少许盐,煮开。将鸡肉放入,煮开后浸泡10分钟左右。
  • 3.将鸡腿捞出,放入冷水,完全冷却后,将表面的水分晾干。
  • 4.将晾干的鸡腿去骨,切块备用。
  • 5.接下来做米饭,将米淘洗干净,为防止接下来遇油溅出,需要晾干水分。
  • 6.锅中放入鸡油,化开,放入姜片、葱末、蒜末,爆香。
  • 7.将米倒入锅中翻炒,至每一颗米都被油包裹。
  • 8.将炒好的米放入电饭锅中,加入水,煮熟备用。
  • 9.将姜用搅拌机打成姜蓉,备用。
  • 10.将辣椒用搅拌机打成辣酱备用。
  • 11.再准备好老抽,酱料就备齐了。
  • 12.将饭放入碗压紧,倒扣入盘中,放入切好的鸡块,配上酱料即可。
