Steps to make 桂花焦糖布蕾

  • 1.准备食材。
  • 2.新鲜桂花拣出花梗、杂质与发黑的桂花。
  • 3.倒入清水浸泡十分钟,捞出后吸干多余水分。
  • 4.再倒入烤盘的锡纸上,烤箱预热100度烤45分钟。
  • 5.将牛奶与淡奶油倒入奶锅中,再倒入白砂糖、乌龙茶叶与桂花,开小火慢煮,轻轻搅拌防止粘底,煮出茶色后过滤出奶茶备用。
  • 6.鸡蛋分离取出蛋黄,加入白砂糖搅拌均匀。
  • 7.奶茶放凉后倒入蛋黄液中。
  • 8.布丁液搅拌均匀并过滤后倒入模具。
  • 9.烤箱预热170度,烤35分钟、取出后表面撒适量白砂糖,用喷枪喷炙布雷表面,直至出现琥珀色即可。
