Steps to make 五星级口感 【上海油爆虾】

  • 1.准备好材料。
  • 2.切好姜片,葱白,葱绿。
  • 3.用牙签从虾身的倒数第一节与倒数第二节中间穿过,向上挑断虾线,再捏住断开的线头,抻出虾线。(动作要慢点拉出来,实在不会的话直接将虾背剪开挑出来)
  • 4.一次将处理好的虾剪掉虾枪,虾须,虾脚;清洗干净后,沥干水分。
  • 5.锅中放适量油,油量差不多盖过虾身,把沥干水分的虾放入炸。
  • 6.炸到虾壳跟肉有点分离,外壳很酥脆即可;将虾捞出沥干油。(虾油有多可另做炒菜用,很香的)
  • 7.锅中留适量虾油,把姜片和葱白放入爆香。
  • 8.把炸好的虾放入翻炒下。
  • 9.加入盐,白糖,料酒,鸡精,生抽,加半小杯的清水(或高汤),大火烧开,收汁,下锅翻炒的速度要快,这样虾肉吃着才会鲜嫩,不会太老。
  • 10.关火,撒上葱绿,略微拌炒下即可出锅。
  • 11.上海人的口味会稍稍喜欢吃偏甜点的,会多加点白糖,具体调料的量可根据自己家的口味增减哈。生抽的量不要放太多,不然会影响成品色泽。
  • 12.虾壳连着虾肉吃,很是酥脆!
